Salad with spicy squid

The delicious mollusk in a special salad with an exotic tinge… 

Ingredients:
3 medium squid, fresh or frozen, cleaned
2 teaspoons sweet fresh ginger, grated on a fine grater
2 cloves garlic, melted (or as much garlic as we want)
1/2 teaspoon sweet cayenne pepper or 1/4 tsp. sweet plain black pepper
1 teaspoon soup fresh coriander, finely chopped (if we do not like it, replace it with parsley - with a different result)
1/2 teaspoon sweet mixture of 5 powdered spices *
1/2 cup teaspoon crushed tomatoes
2 teaspoons olive oil soup
mixed vegetables (we can use salads, lettuce, lolas, cabbage, carrot, celery root and even bouquets of broccoli and cauliflower, finely chopped or finely grated) - the quantity must be enough to "reach" for 4 individual salads
salt, at will

For the dressing:
1/3 fl. tea olive oil
2 teaspoons soup red wine vinegar
2 short cuts. sweet sugar
2 teaspoons sweet lemon juice

Procedure:
We open the hoods and the bodies of the squid and carve their inside in diamonds. This way they will cook faster and more correctly. Then cut the squid into medium-sized squares. Cut the large tentacles into smaller pieces.

Put the squid pieces in a large bowl, add the ginger, garlic, pepper, 5 spice mixture and the tomato and mix. Put the bowl in the fridge for 10 minutes, to marinate the squid a little.

Then heat a large pan (preferably non-stick) over very high heat. Put 1 tablespoon of olive oil and half the amount of squid, as it is, with the tomato and spices. Bake on high heat for 1-2 minutes, until the squid is soft. Caution: the fire must be strong and the cooking time is minimal otherwise the squid will harden. Repeat the process with the rest of the squid. Lightly salt.

Dressing:
Beat all the sauce ingredients in a jar with a lid.
Salad: In a bowl, mix the salads of your choice with half the dressing. Spread them on a large plate (or in 4 plates), arrange the squid pieces on top, sprinkle with the coriander, pour over the rest of the dressing and serve immediately.

Advice:
The mixture of 5 spices is very popular in Chinese cuisine. We find it ready in good spices, but we can make it ourselves by mixing equal amounts of the following 5 powdered spices: Sichuan pepper, star anise, cloves, cinnamon and fennel seeds. Ideally we buy the whole spices and grind them ourselves in a spice grinder or we beat them very well in the mortar.
