Ingredients:
800 gr. pork cut into pieces
1 large courgette
60 ml of olive oil
1 large chopped onion
2 tomatoes cut into small cubes or 1 box of crushed
2 tbsp tomato paste soup
1 cup teaspoon coarsely chopped celery
juice of 1-2 lemons
salt
pepper

Instructions:
1. Peel the zucchini and cut it into large cubes
2. Heat the olive oil in a wide, shallow saucepan and brown the meat.
3. Remove the meat with a slotted spoon and set aside on a plate.
4. Pour the courgette into the pot and let it brown on all sides.
5. Remove the courgette with a slotted spoon and set aside.
6. Add the onion to the hot oil and sauté for 1-2 minutes.
7. Add the meat, the courgette, the tomato or the concace, the tomato paste and hot water from the kettle until it covers them.
8. Lower the heat, cover the pot and let our food simmer for 1 1/2 hours until the meat is well softened.
9. 15 minutes before the end add the celery, salt and pepper.
10. At the end add the lemon juice, mix lightly and serve.
