Ingredients for 4-6 people
1 1/2 teaspoons bread crumbs
1 medium onion
1 cup grated cheese
salt
pepper
toast beaten
1 1/2 kg spinach
3 eggs
2 tablespoons chopped vegetable margarine
Implementation
With plenty of water and a little vinegar clean and boil the spinach for 10 minutes. Strain it in a colander and push it to drain all the water.
Place little by little on marble or in a plate and cut it with two small knives into small pieces.
Put it in a deep fryer and add salt, pepper, dry bread crumbs, one whole egg and the two yolks, the butter, the cheese and the onion passed through a fine grater.
Knead them all and taking little by little, it is molded into a cylindrical or round shape. Beat the egg whites lightly with 2 tablespoons of water, dip the croquettes in breadcrumbs, then in the egg, then again in breadcrumbs and fry them in vegetable margarine until golden brown on all sides.
