Lenten spinach pie

Recipe with leek and kourou leaf… 

Ingredients for 4-6 people

For dough

1 pack of ready-made kourou dough sheets or make your own dough

For stuffing

1 kg of spinach without the stalks
5 leeks thick, only the white part
½ -3/4 cup of olive oil tea
1 onion grated on a coarse grater
1 bunch of spring onions
Or a bunch of chopped dill
salt, pepper proportional

Implementation

For stuffing

We take the spinach, the leeks, the onion, the chives and the dill, we wash them and we clean them.

Finely chop the vegetables on a cutting board and grate the dried onion on a coarse surface. Then, salt and squeeze them with your hands, to get rid of their liquids. Repeat 2 more times.

Put all the vegetables in a large bowl, add the olive oil, pepper, salt if necessary and stir to combine all the ingredients.

For the dough

Open the kouros leaves as it says on the package.

Grease the baking tray, put 2 oiled sheets, pour the filling, spread it and put another 2 sheets also oiled on top.

Cut the pie and bake at 200 degrees in a preheated oven for 40 minutes.
