Interview with Diamanto Anastasiou

When did you start cooking?
From a very young age, we enjoyed mixing in the kitchen and helping our mother knead breads and make cakes.
Who is your favorite chef, what do you like about him and what is his favorite recipe?
Akis Petretzikis of course! Because we were given the opportunity to get to know him closely, we have to say that Akis is a simple, everyday and true person and that all the recipes he gives are tried and tested and always succeed. All of Akis' recipes are wonderful but we have a small weakness in Banoffee with chocolate. It is an incredibly tasty, quick and easy English dessert, with caramelized sweetened milk, bananas and whipped cream.

What are your goals and future plans?
First of all with the good and with the help of God we want to finish the University. Then what we dream of is to create our own product and sell it to the whole world. Specifically, what we have in mind is to make something with the savior zucchini. We want to promote it and give it the place it deserves.
What is your biggest professional dream?
We would like at some point to be given the opportunity to collaborate with Akis Petretzikis.
Favorite recipe:
In general, we have a small weakness in dough and bread. The smell of yeast, how the dough swells, the transformation of some simple ingredients into fragrant bread is what drives us crazy and attracts our attention.
Favorite food:
This is a really difficult question! However, we believe that we have a weakness for homemade pizza, with crispy and fluffy dough and mixed cheeses.
Favorite ingredient:
There is no favorite ingredient, but there is good raw material and plenty of love!
What food do you never get tired of eating and why?
We love to eat a lot of fruits and vegetables because we know that consuming them offers many benefits to our health.
What was the biggest failure you had in the kitchen?
The first time we tried to make eclairs. Pure disaster! We didn't eat bites, not only us but also the hens that we "offered" to them! It was all our fault for the failure: The recipe, the ingredients, the pots and even our family. It didn't take long, however, for us to realize that the big problem in failure was us! However, this failure did not cut our wings, on the contrary, it made us stronger to improve and achieve our goal.
