Lentil soup with tomato

Ingredients for 4 people

  • 500 gr. lentils
  • 1 medium onion grated on a grater
  • 2 cloves garlic, in slices
  • Or a cup of extra virgin olive oil
  • 1 tomato grated on a grater
  • 2 laurel leaves
  • vinegar
  • salt
  • pepper

Implementation

  1. Clean the lentils and rinse them under running water. Leave them in a bowl of cold water until the onion, tomato and garlic are ready.
  2. Then, drain the lentils and put them in a saucepan with as much water as needed to cover them.
  3. Boil them for 10 minutes and then drain.
  4. Put them back in the pot with 6 cups of fresh water. Add the onion, garlic, tomato and bay leaves.
  5. Let the lentils simmer for about half an hour or as long as it takes to soften.
  6. Add the oil, salt, pepper and a little vinegar. Continue to cook for an additional 30 minutes, until well cooked and simmered.
