Components
For the spice mixture
- 1 kg of chicken wings
- 2 tbsp. soft brown sugar
- 1 tbsp. smoked paprika
- 1 tbsp. baking powder
- ½. etc. Cayenne pepper
- ½. etc. garlic powder
- ½. etc. onion powder
- ½. etc. black pepper
- ½. etc. mustard powder
- ½. etc. salt
For the BBQ
- 1 chicken cube dissolved in 150 ml hot water
- 150 ml ketchup
- 1 medium onion, finely chopped
- 2 cloves chopped garlic
- 2 and others olive oil
- 2 tbsp. balsamic vinegar
- 2 tbsp. soft brown sugar
- 2 tbsp. worcestershire sauce
- 1 tbsp. fish sauce
- 1 tbsp. smoked paprika
- ½. etc. Tabasco
- ½. etc. Cayenne pepper
- ½. etc. garlic powder
- ½. etc. onion powder
- ½. etc. black pepper
- ½. etc. mustard powder
Execution method
For the wings
- In a small bowl, mix all ingredients for spice mixture
- Spread a piece of oil paste on a large baking tray.
- Wear gloves, put the wings in the pan and spread the spice mixture all over the wings, rubbing the wings well to absorb the smells of spices.
- Put the wings in the fridge without covering them and leave them to marinate overnight in the fridge or at least for 3 hours.
- Preheat the oven to 200° C in the air and bake the wings for 10-20 minutes until they remove the fat.
- While they are cooking, prepare the BBQ sauce.
For the BBQ
- Put the olive oil in a saucepan over medium heat.
- Add the onion, garlic and spices and stir until the onion is soft.
- Then, quench with vinegar. the fish sauce and the worcestershire sauce, stir and wait 1-2 minutes for the vinegar to evaporate.
- Add the sugar and stir until the sauce melts and tightens.
- Once dissolved, add the ketchup, broth, tabasco and simmer on low heat for 15-30 minutes until our sauce is completely set.
- Remove from the pan, pour the ingredients into the multi and beat until the mixture is homogeneous.
- Remove the wings from the oven and place them in a large bowl.
- Add the BBQ sauce and mix well so that the BBQ goes everywhere.
- Remove the oil paste from the pan and place the wings again on the pan with new oil paste from below.
- Bake for another 10 minutes in the oven until the wings take on a caramel color and become crispy.
