French onion soup

Ingredients for 4 people

  • 50 gr. butter
  • 3 and others olive oil
  • 800 g peeled white onions (approximately 8-10), sliced ​​or sliced
  • 1 tbsp. sugar
  • 2 tbsp. flour
  • 200 ml white wine
  • 1 tbsp. thyme
  • 1 bay leaf
  • 2 lt. hot beef broth
  • 2 cloves chopped garlic (optional)
  • 30 ml. brandy or brandy
  • half a baguette of bread cut into 8-12 slices 1 cm.
  • 100 gr. grated gruyere

Implementation

  1. Preheat the oven to 160º degrees C.
  2. Prepare the soup. In the kitchen stove, put the butter and oil to burn on low heat in a soup pot.
  3. Add the onions and stirring every now and then and sauté for about 20 minutes on low heat, so that they lose their liquids without burning.
  4. Make the croutons. In a pan in the middle of the oven, put the slices of bread toast well (for about 25 minutes, if the bread is fresh) so that they can float in the soup as croutons and not dissolve as soon as they enter the liquid.
  5. Every 8-10 minutes you turn them with your mind on them, while you proceed with the recipe.
  6. After the first 20 minutes of sautéing, add the sugar and stir the onions for about 5 minutes so that they caramelize and get color and taste.
  7. Add the flour and mix for another 2-3 minutes. As the flour removes the liquids, immediately add the wine (and the brandy if you use) and leave for another 2-3 minutes until the liquid is reduced by about half and all the alcohol has evaporated leaving only the taste.
  8. Add the broth, thyme, bay leaf, salt, pepper and garlic (if using). Boil the soup for another 20-25 minutes (medium to low heat) and remove from the heat for at least 10 minutes until the temperature drops (then it should not boil in the oven).
  9. Gratin the dishes. Preheat the grill to 200 ° -220º degrees C. Put the onion soup in individual refractory utensils, filling them close enough to their rim and add to each plate 2-3 of the toasted bread slices and the grated cheese on top.
  10. Place them under the grill, on the high shelf of the oven and watch them for 4-6 minutes (depending on the oven) until the cheese melts and turns brown.
  11. Carefully remove the hot full dishes from the oven and transfer them to the table.
