Ingredients for 4 people
- 3-4 kilos of octopus
- 100 ml white apple cider vinegar
- 1 liter of water
- 300 ml mavrodafni
- 1. Onion onion bone
- 1 laurel leaf
- 6-8 grains of allspice
- 1 cinnamon stick
- 500 gr. concentrated tomato juice
- salt
- pepper
Implementation
- Fill a deep saucepan with 1 liter of water and add the vinegar. Then place a metal strainer in the bottom of the pot, in the water.
- Then, place the octopus in the colander. Cover the pot and steam the octopus until well softened.
When it softens, cut its tentacles and clean it. - At the same time, clean the onions and boil them until they soften, but being careful not to dissolve.
- In a large pan, pour the butter and the boiled onions and sauté until they turn brown. Then quench with mavrodafni and tomato juice.
- Add the octopus to the sauce together with the spices and cook for another 30 minutes, until the sauce sets.
