Ingredients
- 1 pork fillet
- Salt Pepper
- 1 tbsp olive oil
- 3 sliced onions
- 3 sprigs of fresh thyme
- 2 plums cut in four
- 240 ml of water
- 1 tbsp balsamic vinegar
- 1 tbsp. butter
Implementation
- Preheat the oven to 200 degrees and season the meat with salt and pepper.
- Heat the olive oil in a durable pan and for the oven at medium to high temperature.
- Saute the pork until golden brown on all sides, for 2-4 minutes per side, and transfer to a plate.
- In the same pan, sauté the onions with a pinch of salt until golden brown and caramelized for about 10 minutes.
- Mix the thyme in the mixture with the onions and place the pork in the pan.
- Add the plums to the pork and place in the preheated oven.
- Bake for about 20 minutes, until the inside of the pork is slightly pink.
- Transfer the pork and plums to a plate.
- Place the pan on a medium to high heat and add water and balsamic to the onion mixture.
- Let the mixture boil for about 10 minutes, until the amount is reduced by half.
- Beat the sauce with the butter and pour over the pork and plums.
