Components

For the cake

  • 200 gr. wholemeal flour, sifted
  • 100 gr. oatmeal, sifted
  • 100 gr. cocoa, sifted
  • 230 ml of coconut milk
  • 230 gr. low fat yogurt
  • 4 eggs, at room temperature
  • 300 gr. honey
  • 1 tbsp. coffee (espresso)
  • 1 tbsp. baking soda
  • 1 tbsp. baking powder
  • 1 cinnamon sticks
  • 1 pinch salt

For the glaze with avocado

  • 2 very ripe and soft avocados, cut into pieces
  • 1 ripe banana
  • 150 gr. honey
  • 100 ml of coconut milk
  • 50 gr. cocoa powder, sifted
  • 1 pinch salt
  • 1 pinch of cinnamon
  • ½ κ.γ. coffee (espresso)

Execution method

For the chocolate glaze with avocado

  • Add all the ingredients to the blender and beat until smooth and have a smooth result.
  • Put the icing in the fridge until needed.

For the cake

  • Preheat the oven to 180 ° C and grease and sprinkle with cocoa a mold (cake pan without hole).
  • Put the flour, cocoa, baking soda, baking powder, cinnamon, coffee and salt in a bowl and mix.
  • In another bowl add the remaining ingredients and mix with a whisk until the ingredients are homogenous
  • Then add the solids and mix with a spatula.
  • Put our mixture in the mold and bake for 45 minutes or until a wooden skewer that will be inserted in the center of the cake will come out dry.

  • 2 ripe avocados, sliced
  • 1 ripe banana
  • 150 g of honey
  • 100 ml of coconut milk
  • 50 cocoa, sifted

  • ½ tsp coffee (espresso)

Method

For the avocado frosting

  • Place all the ingredients in a food processor and mix together, stopping to scrape down the sides once or twice.
  • Place the frosting in the fridge.

For the cake

  • Preheat oven to 180 ° C fan and grease a round cake pan without a hole in the middle with olive oil and dust with some cocoa powder.
  • In a bowl add the flours, cocoa, baking soda, baking powder, cinnamon, coffee and salt. Stir.
  • In another bowl add the remaining ingredients and mix well using a hand whisk.
  • Then add the dry ingredients and continue whisking with a spatula to incorporate everything.
  • Pour batter into prepared pan and bake for 45 minutes, or until tester comes out clean.
  • When ready, remove from oven, and allow to cool.

To assemble

  • When the cake is cool, spoon the frosting over the top of the cake.
