Ingredients for 6 people
For the base
- 250 gr. digestive type cookies
- 3 tablespoons butter
- 1 tablespoon sugar
For stuffing
- 750 g cream cheese
- Or cup icing sugar
- Or a cup of sour cream
- zest of 1 tangerine
For the mandarin syrup
- 1 cup tangerine juice
- zest of 1 tangerine
- 4 tablespoons sugar
- 1 tablespoon rum
- thin slices of mandarin
Implementation
- We prepare the base. Put the cookies in the roll together with the sugar and make them powder.
- Transfer them to a bowl, add the melted butter and mix well.
- Transfer the mixture to a mold with a spring 23 cm in diameter and press it with the palm and the back of a spoon to cover the bottom and about 1 cm from the walls of the mold. Put the form in the fridge.
- Prepare the filling: put the cheese with the sugar and the cream in a bowl and work with the mixer until the ingredients are very well combined. Remove the base from the fridge and carefully spread the cream on top.
- Prepare the syrup, boil the juice, sugar and mandarin zest until they become like a thick syrup.
- Add the rum and the mandarin zest, remove from the heat and leave to cool completely.
- Remove the cheesecake from the fridge and cover the surface with the mandarin slices if you want.
- Pour over the syrup carefully and put it back in the fridge for an hour.
