Cheesecake with tangerine

Ingredients for 6 people

For the base

  • 250 gr. digestive type cookies
  • 3 tablespoons butter
  • 1 tablespoon sugar

For stuffing

  • 750 g cream cheese
  • Or cup icing sugar
  • Or a cup of sour cream
  • zest of 1 tangerine

For the mandarin syrup

  • 1 cup tangerine juice
  • zest of 1 tangerine
  • 4 tablespoons sugar
  • 1 tablespoon rum
  • thin slices of mandarin

Implementation

  1. We prepare the base. Put the cookies in the roll together with the sugar and make them powder.
  2. Transfer them to a bowl, add the melted butter and mix well.
  3. Transfer the mixture to a mold with a spring 23 cm in diameter and press it with the palm and the back of a spoon to cover the bottom and about 1 cm from the walls of the mold. Put the form in the fridge.
  4. Prepare the filling: put the cheese with the sugar and the cream in a bowl and work with the mixer until the ingredients are very well combined. Remove the base from the fridge and carefully spread the cream on top.
  5. Prepare the syrup, boil the juice, sugar and mandarin zest until they become like a thick syrup.
  6. Add the rum and the mandarin zest, remove from the heat and leave to cool completely.
  7. Remove the cheesecake from the fridge and cover the surface with the mandarin slices if you want.
  8. Pour over the syrup carefully and put it back in the fridge for an hour.
