Cake with orange and coconut

Ingredients for 4 people

  • 230 gr. butter
  • 180 g sugar
  • 3 eggs
  • 1 tablespoon orange liqueur
  • 2 kg. Orange zest
  • 300 g flour for all uses
  • 1 tbsp. baking powder
  • 1 tsp baking soda
  • 285 ml evaporated milk
  • 1 flitz. coconut

For the syrup

  • 1 flitz. Orange juice
  • 90 g sugar
  • 1 tablespoon orange liqueur

Implementation

  1. Separate the yolks from the egg whites and put them in separate bowls.
  2. Beat the butter together with the sugar in the mixer and add the yolks (one by one), the orange zest and the liqueur.
  3. In a bowl, sift the flour together with the baking powder and soda and add them to the above mixture, alternating with the milk.
  4. Add the coconut, stir and finally add the egg whites that we have beaten into a meringue.
  5. Incorporate the meringue into the mixture using a spatula and making light circular motions from the bottom of the bowl upwards.
  6. Bake in a buttered and floured form, in a preheated oven, at 170oC for about 50 minutes.
  7. Just before taking the cake out of the oven, prepare the syrup by putting the ingredients in a small saucepan over medium heat.
  8. Let them simmer for 1 minute and remove from the heat.
  9. Take the cake out of the oven, unmold it and pour the syrup over it.
