Ingredients for 4 people
- 230 gr. butter
- 180 g sugar
- 3 eggs
- 1 tablespoon orange liqueur
- 2 kg. Orange zest
- 300 g flour for all uses
- 1 tbsp. baking powder
- 1 tsp baking soda
- 285 ml evaporated milk
- 1 flitz. coconut
For the syrup
- 1 flitz. Orange juice
- 90 g sugar
- 1 tablespoon orange liqueur
Implementation
- Separate the yolks from the egg whites and put them in separate bowls.
- Beat the butter together with the sugar in the mixer and add the yolks (one by one), the orange zest and the liqueur.
- In a bowl, sift the flour together with the baking powder and soda and add them to the above mixture, alternating with the milk.
- Add the coconut, stir and finally add the egg whites that we have beaten into a meringue.
- Incorporate the meringue into the mixture using a spatula and making light circular motions from the bottom of the bowl upwards.
- Bake in a buttered and floured form, in a preheated oven, at 170oC for about 50 minutes.
- Just before taking the cake out of the oven, prepare the syrup by putting the ingredients in a small saucepan over medium heat.
- Let them simmer for 1 minute and remove from the heat.
- Take the cake out of the oven, unmold it and pour the syrup over it.
