  • 4 chicken breast fillets
  • 1 tablespoon coarsely chopped black pepper
  • 2 tablespoons chopped fresh oregano
  • 2 tablespoons paprika
  • 1 tablespoon dried chili pepper flakes
  • 2 cloves garlic, melted
  • 2 tablespoons olive oil
  • 2 medium tomatoes, in large pieces
  • 1 small red onion, coarsely chopped
  • 1 medium green pepper, coarsely chopped
  • 2 tablespoons coarsely chopped fresh coriander
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  1. First remove the skin from the fillets. Mix all the marinade ingredients together in a large bowl.
  2. Put and turn the chicken so that it is covered with the mixture. Cover and refrigerate for 15 minutes.
  3. Meanwhile, make the crispy sauce. In a bowl, mix all the vegetables and chopped herbs together.
  4. Make a dressing using olive oil and lime juice, add it to the sauce and mix.
  5. Bake the chicken in a lightly oiled pan for about 15-20 minutes until well cooked and hot.
  6. Serve the chicken with the sauce and salad.
