- 4 chicken breast fillets
- 1 tablespoon coarsely chopped black pepper
- 2 tablespoons chopped fresh oregano
- 2 tablespoons paprika
- 1 tablespoon dried chili pepper flakes
- 2 cloves garlic, melted
- 2 tablespoons olive oil
- 2 medium tomatoes, in large pieces
- 1 small red onion, coarsely chopped
- 1 medium green pepper, coarsely chopped
- 2 tablespoons coarsely chopped fresh coriander
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- First remove the skin from the fillets. Mix all the marinade ingredients together in a large bowl.
- Put and turn the chicken so that it is covered with the mixture. Cover and refrigerate for 15 minutes.
- Meanwhile, make the crispy sauce. In a bowl, mix all the vegetables and chopped herbs together.
- Make a dressing using olive oil and lime juice, add it to the sauce and mix.
- Bake the chicken in a lightly oiled pan for about 15-20 minutes until well cooked and hot.
- Serve the chicken with the sauce and salad.
