Ingredients for 2 people
- 4 boneless chicken breast fillets and skin
- 2 cups cherry tomatoes
- Salt
- freshly ground pepper
- 3 large cloves of garlic
- 2 tablespoon of olive oil
- 10 large fresh basil leaves, finely chopped
- 225 grams of fresh sliced mozzarella
- Balsamic vinegar
Implementation
- Season the chicken fillets with salt and pepper and set aside.
- In a large skillet, heat 1 tablespoon olive oil over medium to high heat.
- Put the chicken fillets in the pan and cook for 10 minutes on each side with the lid closed.
- Heat another tablespoon of olive oil in a saucepan and sauté the garlic over medium to high heat until it gives off its aroma.
- Add the cherry tomatoes and continue sautéing for 5 minutes, until the cherry tomatoes begin to soften. Remove from the heat and stir in the basil.
- When the chicken is well cooked inside and out, add the chopped mozzarella and the mixture with the cherry tomatoes to the pan and heat for another 1-2 minutes. Finally serve by sprinkling with balsamic vinegar and salad.
