Chicken fillet with mozzarella and cherry tomatoes

Ingredients for 2 people

  • 4 boneless chicken breast fillets and skin
  • 2 cups cherry tomatoes
  • Salt
  • freshly ground pepper
  • 3 large cloves of garlic
  • 2 tablespoon of olive oil
  • 10 large fresh basil leaves, finely chopped
  • 225 grams of fresh sliced ​​mozzarella
  • Balsamic vinegar

Implementation

  1. Season the chicken fillets with salt and pepper and set aside.
  2. In a large skillet, heat 1 tablespoon olive oil over medium to high heat.
  3. Put the chicken fillets in the pan and cook for 10 minutes on each side with the lid closed.
  4. Heat another tablespoon of olive oil in a saucepan and sauté the garlic over medium to high heat until it gives off its aroma.
  5. Add the cherry tomatoes and continue sautéing for 5 minutes, until the cherry tomatoes begin to soften. Remove from the heat and stir in the basil.
  6. When the chicken is well cooked inside and out, add the chopped mozzarella and the mixture with the cherry tomatoes to the pan and heat for another 1-2 minutes. Finally serve by sprinkling with balsamic vinegar and salad.
