The alternative way to make guacamole

The delicious Mexican dip goes up with the professional secrets of the chefs

Even if you do not like Mexican cuisine, guacamole is a delicacy that has gone beyond the narrow confines of ethnic food, as you now find it even as an accompaniment to cocktails.

Guacamole is cool, tasty and nutritious and has ripe avocado, lime juice, onion, tomato, garlic, something hot (jalapeno or tabasco pepper), salt, pepper and cilantro.
However, there are chefs who do not put lime at all. This is a proper sacrilege for some, especially since the acidic element of lime is considered necessary to blacken it more slowly, which the more exposed it is to oxygen, the more it acquires this dark shade.
This is of course solved if the guacamole is consumed on the spot. This is what the Mexican cuisine authority, Diana Kennedy, tells us, who makes guacamole with the classic recipe, without lime, however.
Chef Roberto Santibañez tells us that all you need to make guacamole is a small onion, a little garlic, salt, pepper and avocado. It is a matter of preference.
His own secret has to do with the onion. Soak it for 10 minutes in cold water, so that it loses its strong smell.
