How to make homemade beetroot salad with yogurt

Ingredients for 4 people

  • 6 medium beets with their skin
  • 400 gr. (About 1 cup) strained yogurt
  • 2 large cloves of garlic with their skin
  • salt
  • pepper
  • walnut kernels

Implementation

  1. First, preheat the oven to 200 ° C.
  2. Then, put the beets and garlic in a fireproof dish, add 1 full cup of water, cover with foil and bake for 1 hour.
  3. Take them out and drain them.
  4. Rub their skin with your fingers to get it out and press the garlic to get their crumb out.
  5. Chop the beets and grind them in the mixer, together with the garlic, until they become puree.
  6. Take them out in a bowl and mix in the walnut kernels, yogurt, salt and pepper.
  7. Garnish with parsley and serve.
