Risotto with spinach and mushrooms

Ingredients for 2 people

  • 4 tablespoons sesame oil
  • 2 cups brown basmati rice
  • 4 chopped spring onions
  • 1 cup brown sliced ​​mushrooms
  • 1 tablespoon curry
  • 1 yellow pepper, chopped into cubes
  • 150 grams of frozen or fresh spinach
  • 1 cup grated parmesan

Implementation

  1. Boil the rice in a saucepan with salted water for 10 minutes.
  2. In a deep frying pan, heat the sesame oil and lightly sauté the mushrooms, spinach and peppers together with the spring onions for 4 minutes.
  3. Add the boiled rice and stir with a wooden spoon at the beginning in the center of the pan and slowly increase the circles.
  4. Add the curry and season with salt and pepper. Finally, sprinkle with parmesan and continue mixing until it melts and joins with the rest of the ingredients.
