Chicken roll with bacon

Ingredients for 4 people

For the chicken roll

  • 4 large chicken fillets with their skin
  • 2 tablespoons thyme leaves
  • 1 cup brown olive oil
  • salt
  • pepper
  • 12 wide strips of bacon

For the sauce

  • 1 cup olive oil
  • Juice of a lemon
  • 1 tablespoon mustard
  • 3 tablespoons chopped dill

Implementation

  1. Wash the chicken fillets well, dry them, put them in a bowl and pour the olive oil over them. Salt and pepper and sprinkle with thyme.
  2. Wrap each fillet with 3 strips of bacon holding it with a toothpick.
  3. Preheat the oven to 200 degrees, place the fillets on the oven rack with a pan underneath and bake for ½ an hour until well browned. Immediately after, turn them over and bake for another 10 minutes.
  4. While the fillets are cooking, prepare the lemon oil. In the blender of your mixer, place the olive oil, the lemon juice, the mustard and the chopped dill. Beat them until they become a homogeneous mixture.
  5. Remove the baked fillets from the oven, remove the toothpicks and cut them into slices with a very sharp knife.
  6. Serve them on a plate and pour the spicy lemon oil over them.
