Ingredients for 4 people
- 8 cups hearts of spinach
- 1 - 2 spring onions, finely chopped
- 1 - 2 chopped chili peppers
- 2 hard-boiled eggs, cut into four or sliced
- 2 tablespoons chopped fresh basil
- cranberries
For the dressing
- 1 large clove of garlic, peeled
- a little coarse salt
- 2 tablespoons red wine vinegar
- 4 tablespoons extra virgin olive oil
- 1 teaspoon honey
- 1/2 - 1 teaspoon oregano
Implementation
- Put all the ingredients for the dressing in the multi and beat them until they are incorporated. If you make a larger quantity you can leave it in the fridge for up to two days.
- Place the spinach, peppers and onion in a large bowl. Add the dressing and stir to go everywhere. Put the eggs and cranberries on top and serve.
