Spinach salad with eggs

Ingredients for 4 people

  • 8 cups hearts of spinach
  • 1 - 2 spring onions, finely chopped
  • 1 - 2 chopped chili peppers
  • 2 hard-boiled eggs, cut into four or sliced
  • 2 tablespoons chopped fresh basil
  • cranberries

For the dressing

  • 1 large clove of garlic, peeled
  • a little coarse salt
  • 2 tablespoons red wine vinegar
  • 4 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • 1/2 - 1 teaspoon oregano

Implementation

  1. Put all the ingredients for the dressing in the multi and beat them until they are incorporated. If you make a larger quantity you can leave it in the fridge for up to two days.
  2. Place the spinach, peppers and onion in a large bowl. Add the dressing and stir to go everywhere. Put the eggs and cranberries on top and serve.
