Ingredients for 4 people
- 1 and 1/2 orange (zest and juice)
- 2 tablespoons powdered sugar
- 1/4 tablespoon grated cloves
- a little cinnamon
- 3 tablespoons sugar
- 4 eggs
- a little butter for the mold
- 40 grams of butter
- 40 grams of flour
- 200 ml. whipping cream
Implementation
- Melt the butter in a saucepan over medium heat. Add the flour to the butter and stir constantly for 1 minute.
- Remove from the heat, and start pouring the cream little by little, stirring constantly. Put the pot back in the eye.
- When the mixture becomes very thick, remove from the heat and let it cool.
- Mix the icing with the cloves and the cinnamon and add the cream together with the zest and the orange juice.
- Add the yolks one by one, stirring vigorously.
- At the same time, beat the egg whites into a strong meringue and add them to the cream.
- Butter small soufflé utensils well, pour in the cream and place immediately in a preheated oven.
- Bake for 40 minutes at 200 degrees without opening the oven during baking.
