Chocolate souffle

Ingredients for 6 people

  • 2 tbsp butter
  • 1/3 fl. sugar
  • 1 1/3 fl. chopped couverture
  • 6 eggs at room temperature, separate yolks and whites
  • 1 vanilla
  • a pinch of salt + half a teaspoon more

Implementation

  1. First, preheat the oven to 190 degrees.
  2. Then butter the mold or molds and sprinkle the bottom with a little sugar.
  3. Melt the butter with the chocolate in a baking pan or in the microwave.
  4. Then add the egg yolks, vanilla and a pinch of salt. Set the mixture aside.
  5. Beat the 6 egg whites into a meringue. Add half a teaspoon of salt as you beat them and slowly add the sugar.
  6. Then, add the meringue to the chocolate little by little, stirring gently.
  7. Put the mixture in the form and bake for 30 minutes.
  8. The souffle is ready as soon as it is puffed and baked on top. Serve immediately sprinkled with icing.
