Ingredients for 6 people
- 2 tbsp butter
- 1/3 fl. sugar
- 1 1/3 fl. chopped couverture
- 6 eggs at room temperature, separate yolks and whites
- 1 vanilla
- a pinch of salt + half a teaspoon more
Implementation
- First, preheat the oven to 190 degrees.
- Then butter the mold or molds and sprinkle the bottom with a little sugar.
- Melt the butter with the chocolate in a baking pan or in the microwave.
- Then add the egg yolks, vanilla and a pinch of salt. Set the mixture aside.
- Beat the 6 egg whites into a meringue. Add half a teaspoon of salt as you beat them and slowly add the sugar.
- Then, add the meringue to the chocolate little by little, stirring gently.
- Put the mixture in the form and bake for 30 minutes.
- The souffle is ready as soon as it is puffed and baked on top. Serve immediately sprinkled with icing.
