Spaghetti with clams

Ingredients for 4 people

  • 1 packet of spaghetti
  • 800 gr. clams
  • 2-3 cloves of garlic
  • 2/3 fl. White wine
  • 4 tbsp. chopped parsley
  • 1 flitz. olive oil
  • salt
  • pepper

Implementation

  1. In a saucepan with salted water, boil the spaghetti for a few minutes and remove from the heat just before they become al dente.
  2. In a deep frying pan put half the olive oil together with the garlic for 1 minute until lightly browned.
  3. Add the clams and then the wine, cover with a lid and cook until all are opened (whichever is not open, discard).
  4. Add the spaghetti, 1/2 tsp. from the water where he boiled the spaghetti and the rest of the olive oil.
  5. Slowly add hot water (from what the spaghetti boiled) and cook until it becomes al dente, and the juices from the shells with the olive oil and the starch from the pasta create a thick sauce.
  6. Sprinkle with chopped parsley and serve.
