Ingredients for 4 people
- 500 grams of boneless chicken breast, without skin
- 500 grams of small red potatoes, cut into slices
- 3 medium red onions, cut into thick slices
- 2 red peppers cut into thick slices
- 1 clove of garlic, finely chopped
- 1 teaspoon cumin, paprika, fennel seeds
- 3 tablespoon of olive oil
- zest and juice of 1 lemon
- 50 grams of whole white almonds, coarsely chopped
- 170 grams of yogurt 0%
- small handful of parsley or coriander, finely chopped
- 3 tablespoons stuffed olives
Implementation
- Preheat the oven to 180 degrees. Put the chicken fillet cut in half along with the onions, potatoes, olives and peppers in a large bowl.
- In another bowl, mix together the garlic, spices, oil, lemon zest and juice. Mix it on top of everything and spread the mixture in the pan.
- Bake for 40 minutes, turning the chicken in the first 20 minutes. Add the almonds for the last 8 minutes of cooking.
- Serve in a bowl with a large spoonful of 0% yogurt and a little chopped parsley or coriander.
