Ingredients

  • 120 ml of olive oil
  • 120 ml seed oil
  • 1 orange zest
  • 60 ml orange juice
  • 75 g sugar
  • 0,5 cinnamon
  • 50 ml of brandy
  • 0,5 tsp. baking powder
  • 0,25 tbsp. baking soda
  • 500 g flour for all uses

For the syrup

  • 350 ml of water
  • 250 g sugar
  • 250 gr. honey
  • 1 cinnamon stick
  • 1 slice of orange

100 gr. chopped walnuts (for sprinkling)

Implementation

  1. First, prepare the syrup. Put the water, sugar, honey, cinnamon and orange slice in a saucepan. Boil for 5 minutes. Set aside.
  2. Then, put in a bowl the olive oil, the seed oil, the zest, the sugar, the orange juice, the cinnamon, the cognac, the baking powder and the baking soda.
  3. Stir with a pastry spatula until the mixture is homogeneous.
  4. Add the flour and continue mixing to incorporate the flour.
  5. Shape the melomakarona and place them in a pan with oil paste. Carve them with a fork.
  6. Bake in a preheated oven at 170 ° C for 25 minutes. Do not leave them longer because they will tighten.
  7. Make sure that the syrup has cooled and as soon as the melomakarona are ready, dip them as they are hot. Pass them for 2 minutes (the times here depend on how syrupy you want them) from the syrup and then place them on a plate.
  8. Sprinkle with chopped walnuts.
