Tortellini with eggplants and peppers

Ingredients for 4 people

  • Half a kilo of tortellini with meat
  • Half a kilo of eggplants in cubes
  • 600 grams of peeled and chopped tomatoes
  • 1 red pepper into cubes
  • 4 tablespoons sour cream
  • 2 cloves of garlic chopped
  • 1 grated onion
  • 1 teaspoon basil
  • 1 teaspoon sugar
  • 4 tablespoons salt
  • 1 cube of vegetables
  • 8 tablespoons oil
  • Half a glass of water
  • basil

Implementation

  1. Leave the aubergines in the salt for half an hour and then rinse them well.
  2. Fry them lightly and add the peppers and garlic, onion and tomatoes, sugar, cube and water.
  3. Let them boil for 10 minutes and add the basil.
  4. Turn off the heat and add the cream. Once it gets a light boil it is ready.
  5. Meanwhile, we have boiled our pasta and pour the sauce over it, sprinkle with plenty of cheese and basil and serve immediately.
