Ingredients for 4 people
- 400 grams of blanched almonds coarse
- 200 grams of sugar
- 6 eggs, separated from the yolks by the whites
- 250 grams of unsalted butter
- Orange liqueur (Grand Marnier or Triple Sec)
- 250 grams of dark chocolate melted couverture
Implementation
- Preheat the oven to 180 degrees. In a food processor or blender, grind the almonds into fine grains.
- Coarsely chop the chocolate and melt it in a baking pan together with the butter.
- Beat the egg whites into a tight meringue and set aside. Beat the yolks, sugar and orange liqueur until it becomes a soft smooth cream.
- Add the melted chocolate and almonds and stir. Then fold the mixture together with the meringue with a spatula until the ingredients are combined.
- Pour into a buttered round pan with non-stick paper and bake for about 60 minutes. Allow to cool well before demoulding.
