Caprese cake

Ingredients for 4 people

  • 400 grams of blanched almonds coarse
  • 200 grams of sugar
  • 6 eggs, separated from the yolks by the whites
  • 250 grams of unsalted butter
  • Orange liqueur (Grand Marnier or Triple Sec)
  • 250 grams of dark chocolate melted couverture

Implementation

  1. Preheat the oven to 180 degrees. In a food processor or blender, grind the almonds into fine grains.
  2. Coarsely chop the chocolate and melt it in a baking pan together with the butter.
  3. Beat the egg whites into a tight meringue and set aside. Beat the yolks, sugar and orange liqueur until it becomes a soft smooth cream.
  4. Add the melted chocolate and almonds and stir. Then fold the mixture together with the meringue with a spatula until the ingredients are combined.
  5. Pour into a buttered round pan with non-stick paper and bake for about 60 minutes. Allow to cool well before demoulding.
