Ingredients
- 8 lamb chops
- 1/4 cup tea olive oil
- Juice of a lemon
- 2 tablespoons dry oregano
- 4 cloves chopped garlic
- 1 tbsp. of sweet salt
- 1/2 tsp. freshly ground black pepper
- 1 tbsp olive oil for cooking
Implementation

Using absorbent paper towels, dry the ribs and discard any bone fragments.

Mix all ingredients together in a small bowl.

Place the lamb chops in a large pan or on a large plate and pour over the marinade, spreading it well on the meat with your hand. Cover with plastic wrap and leave for half an hour or for a more intense taste overnight in the refrigerator. Before cooking the ribs let them sit at room temperature for 30 minutes.

Heat a little olive oil in a pan (preferably cast iron or grill) over high heat until it starts to smoke. Fry the ribs in 2 batches for 3-4 minutes on each side, depending on the thickness and until they are made according to your preferences.

Allow to rest for 5 minutes before serving.

Sprinkle with a little extra dried oregano for extra flavor and a little extra lemon juice.
