The reason for the "Suzi Tros" opened by the team of the successful Mazi that also started operating in Notting Hill, 7 years ago.

I had stopped working in the field of public relations and was looking to start something of my own and more creative. A friend at that time was opening a delicatessen in Chelsea and knowing my love for the place she suggested we work together.

- How did you get to London?

I was in London after completing my studies in Scotland. I had said I would stay for one to two years at most, but I never left.

- Was the easy way to open restaurants in that city?

Yes and no. London is a very demanding and competitive city at a crazy pace. On the other hand, some bureaucratic things are much simpler in relation to Greece.

"The phrase" Suzy eats "represents all gourmets"

After the success of Mazi, we wanted to open a second Greek restaurant in London, but a little different, showing another side of Greek food. "Suzy eat" is an expression I used many times in my daily life to tease loved ones. Represents all gourmets.

- Have you seen the movie, did you like it?

Countless times. It is one of the most popular Greek movies.

- What flavors do you suggest to your customers?

Smoked eggplant with tahini and honey, croquettes with metsovone and bacon, shrimp tartare.

- Do you use materials from Greece and if so what are they?

Tarama, slice, oil, oregano, salt, honey, mountain tea, thyme. Necessarily Greek.

- How do you deal with the possibility of a naughty Brexit? Are you scared of the setting?

Very! 90% of our employees are Greeks. All our wines and drinks are Greek and most products come from Europe. The fall of the pound against the euro is already a big blow for us as we buy everything more expensive than before without even having increased our own prices.

- Would you come back to Greece?

I do not rule out any possibility, but for now my life is here.
