Homemade lemon pie

Ingredients

  • 100 gr. butter
  • 1 cup and 3/4 cup flour
  • 500 g sugar
  • zest of 2 lemons
  • 3/4 cup lemon juice
  • 4 eggs
  • powdered sugar for sprinkling

Implementation

  1. To make the base of the lemon pie, beat in the mixer one cup of the flour with 100 gr. sugar.
  2. Add the zest of one lemon and the butter and continue stirring. Butter a baking tray about 24 cm in diameter and spread the dough.
  3. Bake in a preheated oven for about 20 minutes.
  4. For the filling, beat the eggs with the remaining sugar and continue with the zest of the second lemon and the juice of the lemons. Finally add the rest of the flour.
  5. Remove the pan from the oven where the base dough has been half-baked and spread the filling evenly.
  6. Put the pan back in the oven and bake for about another 25-30 minutes (depending on the oven).
  7. Take out the lemon pie and as soon as it cools, sprinkle with powdered sugar.
