Recipe for Linguini with avocado, tomato and lime

Ingredients

  • 115 gr. wholemeal linguine
  • 1 lime, juice and zest
  • 1 avocado, finely chopped
  • 2 large ripe tomatoes, finely chopped
  • Fresh coriander, finely chopped
  • 1 red onion, finely chopped
  • 1 red chili pepper, peeled and chopped (optional)

Implementation

Boil the pasta according to the packaging instructions.

Meanwhile, place the lime juice and zest in a medium bowl with the avocado, tomatoes, coriander, onion and chili (if using) and mix well.

step 3

Strain the pasta, throw it in the bowl and mix well.

Serve immediately while still hot.
