Components

  • 400 gr. + 100 gr. ice cream (35% fat)
  • 400 gr. iced sweetened condensed milk
  • 225 gr. anari unsalted at room temperature
  • 200 gr. cream cheese at room temperature
  • 1 tbsp. vanilla extract or 2 vanillas
  • Two pinches of cinnamon
  • 3 tbsp. rose water
  • 100 gr. walnuts and extra for serving (optional)
  • honey for serving (optional)

 Method eexecution

  • Put the cream in the freezer until used.
  • Melt the anari with a fork and pass it through a fine strainer so that it does not have tangles. Put the anari and the cream (100gr.) In the mixer and beat with the whisk on high speed for 2-3 minutes until fluffy and combined. Add the flower water and cinnamon, mix and keep in a bowl.
  • Then, with a clean mixer, beat the cream (400gr.) On medium to high speed until the cream starts to tighten. Transfer the whipped cream to a clean bowl.
  • Add the sweetened milk and cream cheese to the bowl of the mixer and beat on high speed until the mixture becomes a thick cream. Add the vanilla and stir.
  • Add the mixture with the anari and the chopped walnuts to the mixer and mix with a spatula until the mixtures are homogenous. Finally, incorporate the whipped cream with a plastic spatula.
  • Pour the mixture into a resealable container and put it in the freezer for 12 hours or overnight.
  • It is good to leave it out of the freezer for 10-15 minutes before serving to soften it. Serve the ice cream with honey and extra nuts if desired.
