Ingredients for 4 people
For the base
- 250 gr. Digestive type cookies
- 125 gr. melted butter + 2 tbsp. extra for grease pan
For stuffing
- 500 g cream cheese
- 1 cups teaspoon powdered sugar
- 2 vanilla extract
- 2 eggs
- 2 and others lemon juice
- 300 gr. sour cream
Implementation
- Preheat the oven to 170 degrees and butter a round pan with a removable base, with a base diameter of 22 cm and a depth of 6 cm.
For the base
- Crush the biscuits into a powder, add the butter and continue beating until they are incorporated and you have a mixture like wet sand.
- Pour the mixture into the buttered pan and spread evenly on the base and the walls. Put it in the fridge for 30 minutes.
For stuffing
- Beat the cream cheese with the sugar and vanilla with the mixer until you have a smooth and fluffy mixture.
- Add the eggs, one at a time, continuing to beat until fully combined.
- Add the lemon juice and the sour cream and beat until all the ingredients are homogenous.
- Pour the mixture into the pan over the cold base, flatten the surface and bake in the preheated oven for 1 hour and 10 minutes.
- When it is ready, turn off the oven and leave it for 3 hours to cool in the oven with the door ajar.
- Remove from the oven and refrigerate for at least 3 hours or overnight to cool and set well.
- Cut it into pieces, garnish it, optionally, with fruit of your choice and serve.
