Components
• 200 gr. cream cheese
• 500 gr. 35% fat cream very well frozen
• 400 gr. condensed milk
• 1 tbsp. vanilla extract
• 250 gr. strawberries
• 225 gr. pie-bar cookies (36 cookies)
Execution method
For ice cream
• Mash the strawberries in a blender and pour the pulp into a bowl.
• Put the ice cream in the mixer bucket and beat it with the wire at high speed until it thickens.
• Remove from the mixer and put the whipped cream in a bowl.
• Then, add the cream cheese and sweetened condensed milk to the bucket and beat until smooth.
• Using a plastic spatula, incorporate the whipped cream into the cream cheese mixture.
• Divide the mixture into two. Pour the strawberry pulp into one and the other vanilla extract and mix well with a spatula.
For assembly
• Put a film in a pan and place the cookies with the good side facing the bottom next to each other, leaving a small gap between them.
• Pour the strawberry mixture and the vanilla mixture on top.
• Cover with the remaining cookies and cover with a foil.
• Place the ice cream in the freezer to freeze for about 5 hours or overnight.
• Cut the ice cream with a knife into the cookie cutters and serve.
