- 50 gr. soft butter
- 4 slices of bread of your choice
- 1 tbsp. flour
- 100 ml of milk
- 1 tbsp. Fresh thyme leaves
- 80 gr. yellow grated cheese
- 2 tbsp. Dijon mustard
- 1 tbsp. wholegrain mustard
- 2 slices of finely chopped ham
- 2 large free-range eggs
- Melt the butter in a small pan or saucepan.
- Spread a little of the melted butter on one side of each slice of bread.
- Bake the bread on the grill until it turns brown.
- Meanwhile, add the flour to the remaining melted butter, stirring constantly over low heat, for about 1 minute.
- Slowly add the milk, stirring, and once the mixture thickens, remove from the heat and add the wholegrain mustard, thyme and 30 gr. from grated cheese.
- Spread the mustard Dijon on two of the baked slices of bread (on the inside that did not have butter).
- Place the ham on them and add the rest of the grated cheese. Close the sandwiches with the other two slices of bread.
- Coat the toast with the béchamel you have made and bake for another 5 minutes on the grill, until they turn brown.
- In a pan, put a little olive oil to burn and fry the eggs.
- Put an egg yolk on each sandwich and top with a little more fresh thyme.
