Baked eggs with spinach and tomato

  • 4 eggs
  • 100 gr. spinach
  • 400 gr. chopped tomatoes
  • 1 tbsp. chili flakes


step 1

Preheat the oven to 180 degrees.

Place the spinach in a colander and then pour boiling water to wither the leaves.

step 3

Strain and distribute evenly in individual clay pots.

step 4

Mix the tomatoes with the chili flakes and season with salt and pepper.

step 5

Distribute evenly on the clay with the spinach and make a small hole in the center of each.

step 6

Break in the egg and bake for 12-15 minutes or more depending on how you like your eggs.
