Omelet rolls with cheese and herbs

Ingredients for 4 people

For the omelette

  • 4 eggs
  • a small handful of chopped parsley
  • 1 handful of chopped chives
  • 1 small clove of garlic, finely chopped
  • olive oil

For stuffing

  • 250 grams of ricotta

Implementation

  1. Beat the eggs with 2 tablespoons of water. Stir in the parsley, chives and garlic.
  2. Heat a heavy-duty skillet over medium heat with a little oil.
  3. When the oil is warm, add a tablespoon (about one third) of the egg mixture and shake the pan to cook it evenly.
  4. Lower the heat and cook for a few more minutes. Then turn the omelette upside down while continuing to bake.
  5. Remove the omelette from the pan and continue the same process with the rest of the egg mixture.

For stuffing

  1. Mix the ricotta with parsley and a little pepper. Spread the mixture on top of each omelette and roll with your hand.
  2. Put in the fridge for a while until the mixture is firm and then cut into bites.
