Ingredients for 4 people
For the omelette
- 4 eggs
- a small handful of chopped parsley
- 1 handful of chopped chives
- 1 small clove of garlic, finely chopped
- olive oil
For stuffing
- 250 grams of ricotta
Implementation
- Beat the eggs with 2 tablespoons of water. Stir in the parsley, chives and garlic.
- Heat a heavy-duty skillet over medium heat with a little oil.
- When the oil is warm, add a tablespoon (about one third) of the egg mixture and shake the pan to cook it evenly.
- Lower the heat and cook for a few more minutes. Then turn the omelette upside down while continuing to bake.
- Remove the omelette from the pan and continue the same process with the rest of the egg mixture.
For stuffing
- Mix the ricotta with parsley and a little pepper. Spread the mixture on top of each omelette and roll with your hand.
- Put in the fridge for a while until the mixture is firm and then cut into bites.
