Recipe for Apple Muffins with Almonds

For breakfast or as an accompaniment to afternoon coffee

  • 75 gr. butter, melted, plus extra for the muffin cases
  • 100 gr. self-raising flour, plus extra for dusting
  • 100 gr. powdered sugar
  • 1 egg, beaten
  • 1/2 tsp. almond extract
  • 60 gr. apples, peeled and thinly sliced
  • 15 gr. flaked almonds

Preheat the oven to 180 degrees.

Lightly butter the muffin cases, dust with flour and place on a baking sheet lined with parchment paper.

Pour the melted butter into a large bowl. Add the sugar, flour, egg and almond extract and mix until combined.

Spoon some of the mixture into the base of each muffin case, place some of the apple slices on top of the mixture and spoon the rest of the mixture on top, smoothing the surface with the back of a teaspoon.

Sprinkle each muffin with flaked almonds. Bake for 25-30 minutes or until well puffed and golden.

Set aside to cool for about 10 minutes before removing from the cases. Serve warm with a spoonful of crème fraîche (optional).
