Recipe for Healthy Potato Salad

Ingredients

  • 600 gr. baby potatoes, cut in half
  • 2 cup tea yogurt
  • 2 kg mustard
  • Juice of 1/2 lemon
  • Salt Pepper
  • 3 spring onions, finely chopped
  • 1/4 cup teaspoon fresh chives, chopped
  • 1/4 cup teaspoon of freshly chopped parsley

Implementation

Heat a saucepan of salted water until it boils. Add the potatoes and cook for about 8 to 10 minutes, until soft.

Strain the water and let the potatoes cool completely by putting them in the fridge for at least 1 hour.

To make the dressing, add the yogurt, mustard and lemon juice to a bowl and mix well. Season with salt and pepper and add to the potatoes, spring onions, chives and chopped parsley. Mix well so that the yogurt, potatoes and herbs are well combined.

Serve cold.
