Recipe for Pasta Salad with Salmon

It replaces a decent regular meal

  • 300 gr. pasta
  • 300 gr. smoked salmon
  • 100 gr. green beans, cut in half
  • 4 eggs
  • 320 gr. cherry tomatoes cut in half
  • 60 gr. baby spinach & arugula
  • 1/3 cup tea pitted black olives
  • 2 tbsp capers
  • 1/4 cup tea olive oil
  • 1/4 cup tea with lemon juice


step 1

Cook the pasta following the instructions on the package, adding the beans for the last 5 minutes of boiling. Strain and transfer to a large serving platter.

Meanwhile, bring a small saucepan of water to a boil. Add the eggs and cook for 5 minutes or until cooked to your liking.

Add the cherry tomatoes, spinach and arugula, salmon, olives and capers to the pasta mixture, season with salt and pepper and mix well.

step 4

Beat the oil and lemon juice in a small bowl until well combined and pour over the salad. Peel each egg, cut in half and place on top of the salad.
